Noviss Metodo Classico
Obtained from hand-picked Falanghina grapes, Noviss Metodo Classico presents a bright gold color with fine and persistent perlage with intense aromas of citrus and white flowers followed by sweet crust of fresh bread and white chocolate.
Unexpectedly soft and creamy; the good acidity enhances its freshness.
Ideal with seafood and shellfish but suitable for all occasions.
Vinification: Soft pressing of whole grapes, static decantation of must, controlled fermentation in stainless steel tanks.
After decanting, the wine ages for about 12 months in steel. Following are bottling (tirage), the refermentation in the bottle, and the minimum aging of 12 months on its lees, at a constant temperature of 10 ° – 12 ° C.
